September 7th Newsletter – Spelt French Bread

Dear Spelties,

This weeks Spelt recipe – Spelt French Bread

Ingredients

2 cups hot water
2 teaspoons olive oil
1 1/2 teaspoons salt
1 tablespoon organic cane sugar
1 teaspoon vinegar
6 1/2 cups white spelt flour
3 tablespoons yeast

Method

Place ingredients in mixer in order listed

Mix on speed #1 for 5 minutes

Mix on speed #2 for 5 minutes

Let rise in mixer bowl covered on warm stove, about one hour

Divide in 2, shape into 2 french loaves and place on cookie sheet with parchment paper for baking

let rise again for 20 to 25 minutes depending on temperature of kitchen, spray with warm water and slit diagonally 5 slits

Bake 20 to 25 mins in 350 degree oven.

August 24th Newsletter – Spelt Peach Cake

Dear Spelties,
This weeks Spelt recipe – Spelt Peach Cake

At this time of year I love to can and set aside as much of the incredibly delicious BC fruit that I can find. So far, I have canned over 75 pounds of BC cherries, apricots, peaches from Organic farms around the province and I am going to can pears, plums and more peaches this coming week. I have also made jams with blueberries and raspberries and next is going to be a blackcurrant port jelly. This winter I will use my peaches to make this delightful cake but for now, I will make as many as I can with big beautiful fresh BC organic peaches.

Ingredients

Topping

1/4 cup unsalted butter
1/8 cup maple sugar
1/2 cup organic cane sugar
4 ripe organic peaches, peeled and cut into 8 wedges each – I used a hot water bath to peel the skin off the peaches.

Cake

2 1/4 cups White Spelt flour
3 teaspoons baking powder
1/2 cup unsalted butter
1 cup organic cane sugar
2 large eggs
2 teaspoons pure vanilla extract
1 cup of buttermilk (I used leftover liquid from making a soft goat cheese)

Method

For the topping, melt the butter and add the maple sugar and organic cane sugar. Take a greased 9 inch spring form cake pan and press mixture evenly on bottom of pan. Place peach slices on top of sugar mixture.

In mixing bowl, mix flour and baking powder together and set aside.

Beat butter and sugar together with electric mixer for 2 to 3 minutes, until mixture is light and fluffy. Add the eggs one at a time, beating well after each addition. Add vanilla and buttermilk and beat well until combined.

Gently stir in the dry ingredients until just incorporated and lumps are gone.

Pour batter evenly over peaches.

Place cake pan on a baking sheet and bake on the centre rack of preheated 350 degree oven for 55 minutes to an hour, or until cake tester comes out clean. Let cake cool for 10 minutes before turning out upside down onto a plate. Serve slightly warm.

August 10th Newsletter – Spelt Baguettes

Dear Spelties,

This past week has been so much fun starting off baking Spelt Baguettes with a friend, Pamela and then going to Harrison for Ceili camp where my daughter and Pamela’s daughter were both dancing, singing and having a good time and then going to the Farm House Natural Cheese shop 5 minutes away to buy some incredible brie to have with baguettes and my homemade raspberry-apricot jam. I also found a new cheese called Lady Jane which I had to buy since I was always called Lady Jane as a child when I was in trouble. I am thinking this cheese is just the perfect kind of trouble I like to get into. You can find this cheese at various Farmer’s Markets or at http://www.farmhousecheeses.com

Spelt Baguettes Recipe – makes 2

1 c hot water
2tsp sugar
1 tsp kosher salt
1tsp olive oil
2 1/2 cups white spelt flour
1/2 tbsp instant yeast

Put it all in mixer at same time in order listed with dough hook, 5

mins on #1, 5mins#2 speeds

Let rise in mixer bowl covered on warm stove, an hourish

Divide in 2, shape baguettes, do not over work, place on baguette

pans that have been olive oiled, let rise again, slit diagonally 5 slits

Bake 18 mins approx in oven 350 degrees

Serve with beer, butter and brie…

August 3rd Newsletter – Bake Anywhere Spelt Blueberry Scones

Dear Spelties,
This weeks Spelt recipe – Bake anywhere Spelt Blueberry Scones!

And I mean bake anywhere. You can make these in an oven or you can bake them in a cast iron frying pan over an open fire when camping. I use to make these all the time when I had a cabin with a wood stove. I would just put the cast iron frying pan on the stove, put a little bit of oil in it and flatten the scones as much as I could, cook them for about 5 minutes on each side and then serve them piping hot with butter.

Ingredients

3 cups White Spelt flour
3 Tablespoons organic cane sugar
1 teaspoon baking powder
1/2 teaspoon salt
6 tablespoons butter
1/3 cup of fresh blueberries
1 egg beaten
1/2 cup milk

Method

Mix white spelt flour, sugar, baking powder and salt together. Cut butter into flour mixture until mixture resembles fine meal.

Add fresh blueberries.

Mix egg and milk together and gently fold into flour mixture to form a soft dough. Careful not to over mix, it will make your scones heavy.

Pat dough into 3/4 or 1/2 inch thick patties.

Bake on baking sheet at 400 degrees for 15 to 18 minutes or until knife inserted in center comes out clean.

July 20th Newsletter – Spelt Fillo Quiches

This weeks Spelt recipe – Vancouver Folk Music Festival Spelt Fillo Quiches

As I was getting ready for another year at the Vancouver Folk Music Festival, I realized that the first one I attended was thirty years ago, and I have now been volunteering for 3 years. This has always been an amazing social and musical event and being able to volunteer now is such a delight for me. This year was a bit hectic for me in that I had a volunteer shift all day Friday and then it is the weekend of the folk fest, so I had to make something on Thursday that would get me through the weekend. I thought about what things I love to make and this is my recipe for the weekend. These are perfect to make a day or two ahead and keep in the fridge for whatever event or meal you want.

Ingredients

Makes 12

4 eggs
2 cups of milk (I used Avalon 2% organic)
1/4 teaspoon salt
1/8 teaspoon black pepper
3/4 cup of ham/smoked salmon/vegetables
1 cup grated cheese
1 tablespoon white Spelt flour

Spelt Fillo Dough

Method

Beat eggs and mix together with milk, salt and pepper. Mix meat, vegetable and cheese together with flour. I made two different types for the Folk Festival, smoked salmon asparagus and Irish ham with gouda cheese.

Cut fillo dough into 4 inch squares, 2 or 3 sheets thick and gently place into muffin tin. Put dry ingredients (meat/veg/cheese mixture) evenly into 12 cups. Pour egg mixture evenly into 12 cups and bake at 350 degrees for 25 to 30 minutes or until knife inserted in center comes out clean. Remove from oven, let cool, refrigerate and take with you on a picnic or to the Vancouver Folk Music Festival in your cooler. These are a nice size for a snack or with Fries from Mad Jack’s at the folk festival (tell them the girl in the blue dress sent you, they will know who you mean).

This weeks Spelt recipe – My favourite Tuna Sandwiches made with Spelt Bread

Ingredients

1 can of tuna (try Estevan Tuna from the Farmer’s Market)
1 small carrot, cut into very small pieces
1/2 celery stalk, cut into very small pieces
3 tablespoons of mayonnaise

Method

July 5th Newsletter – Lamburgers on Spelt Burger Buns

Dear Spelties,
This weeks Spelt recipe – Lamburgers on Spelt Burger Buns

Ingredients

1 lb ground lamb (I buy mine at Cioffi’s in Burnaby)
1 teaspoon salt
1/4 cup blue cheese (Try the Farmhouse Castle Blue)
1/2 teaspoon each of oregano, basil and cumin

4 Spelt Hamburger Buns (Recipe in our cookbook – Basic Spelt)
Buttercrunch lettuce
Caramelized onions (I like to add a bit of port for this recipe)
1 large fresh tomato sliced
mayonnaise, dijon mustard, relish and ketchup

Method

Follow Hamburger bun recipe in our cookbook about 4 hours before making this meal or do it several days in advance and freeze the buns sliced as soon as they are cool. If the dough is stiff add a couple tablespoons water to make it soft.

Mix together lamb, salt, cheese and spices in large bowl. Thoroughly combine and form into 4 – 1/4 inch thick burger patties. Cook on medium heat in a frying pan or cook on medium low heat barbecue until cooked fully through.

Meanwhile caramelize the onions in another pan.

Serve onions and burgers hot with fresh and/or toasted buns, tomato lettuce and condiments.

Serve with numerous napkins or on a tarp as these burgers can get really messy.

I am currently in the United States and even though I did not drive this time, I am still on the lookout for Rudi’s White Spelt Tortillas and Vita-Spelt’s lasagne noodles. I often buy both at the Skagit Valley Food Co-op which is on our way when driving to Seattle. Quite close to where the bridge recently fell. Check it out next time you drive the I-5 between the Peace Arch Border and Seattle. They have great food.

June 28th Newsletter – Spelt Picnic Potluck Loaf

Dear Spelties,
This weeks Spelt recipe – Spelt Picnic Potluck Loaf

This is one of my favourite dishes to make for potlucks and picnics. I will be making this loaf for my Canada Day Party! It is very versatile, instead of the pepper, feta and pesto, you can put in ham and swiss cheese with mustard instead, or smoked slamon and asaparagus. Experiment with the recipe and e-mail to tell us what you made. Choose a variety of cheeses, meats and vegetables to make it your own.

Ingredients

3/4 cup melted unsalted butter
1/2 cup milk
5 large eggs

1 cup chopped red pepper
160 grams feta (I used Little Qualicum Cheeseworks sunshine feta)

1 tablespoon pesto

Dry:
2 1/2 cups white spelt flour
1 1/4 teaspoons instant yeast

Method

Mix butter, milk and eggs in large mixing bowl,

Whisk until well blended,
Fold in the cheese and vegetables

Add yeast and flour together in a seperate bowl and add to liquid mixture.

Mix until smooth with a rubber spatula and when the mixture is well blended, drizzle the pesto on top and swirl it into the mixture without fully blending.

Scrape mixture into a loaf pan that is well oiled.

Bake at 350?for 45 to 55 minutes until cake tester or toothpick comes out clean, let cool on a plate or rack.

Slice and serve on a plate. Excellent served with all types of sauces. Great for taking to a party or picnic.

June 21st Newsletter – Spelt Double Chocolate Chip Cookies

Dear Spelties,
This weeks Spelt recipe – Double Chocolate Chip Cookies

Ingredients

1 lb soft unsalted butter( not melted)
1 1/2 cup best brown sugar
1 cup organic cane sugar
2 teaspoons vanilla
2 large eggs

Dry:
6 cups white spelt flour
2 teaspoons baking soda
2 teaspoons salt
4 cups chocolate chips

Method

Cream butter and sugars in large mixing bowl,

Add vanilla and eggs and mix together with whisk until well blended

Add dry ingredients all together in a seperate bowl and add to creamed mixture.

Mix until smooth, use metal spoon, then use gloves.

Scoop onto tray using small scoop or spoon

Press down a bit

Bake at 325?for 10 minutes, then rotate and bake for 2 to 3 minutes.

June 14th Newsletter – Spelt Pita Bread

Dear Spelties,

Order flour and pasta through our website http://thespeltbakers.ca/spelt-buyers-group/

Spelt Pita Bread

Ingredients

1 cup luke warm water
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon sugar
2 1/2 cups White Spelt Flour
2 teaspoons yeast

Place the ingredients in your mixer ( I use a kitchen aid mixer) in the order listed.

Using the dough hook, mix on lowest speed for 3 minutes.

Turn up to the next speed and continue mixing for another 5 minutes.

Take the dough hook out of the bowl scraping the dough off of it and let the dough rest for 30 minutes, covered.

Take dough out of mixing bowl and place on floured board, divide into 8 balls. Let rest for ten minutes. Meanwhile preheat the oven to 400 degrees.

Flatten each ball with your hand and then using a rolling pin, roll from the middle out. Roll each ball to between 1/4 and 1/8 of an inch thick.

Place on a baking sheet and let rest for 5 to 10 minutes. Then bake in the oven for 3 to 5 minutes until pockets puff up.
