Janet Féirín

Founder of the former Spelt Bakery opened in December 1998 after selling at the East Vancouver Farmer’s Market that summer. She started baking with spelt over 20 years ago after discovering that she had a wheat intolerance. She was determined to make good breads and pastries and discovered that spelt is an amazing grain to bake with, though very different from wheat.

Janet, a born and raised first generation Vancouverite of British parents, was the first professional spelt baker in Canada. Janet has since first using spelt, written more recipes than she can count. She is passionate about this grain, not only because of the beautiful products that can be made with it, but also because of the many health benefits of eating this grain that is a complete protein. Janet has trained, in 12 years, numerous bakers to bake with this grain and strives to share her knowledge to educate people on the wonder grain spelt.

 

Chris Hedbaut

Has been Janet’s partner in the business since 2007. She was a chef and kitchen manager in the food industry for over 25 years. She has always been a rebellious chef and brings a love of flavour and fusion to the recipes. Janet and Chris enjoy creating ideas together in their kitchen in their home in East Vancouver and sharing them with the world.

Chris has exceptional organization skills and a passion for graphic design specializing in food labelling and marketing materials for the industry. Her bilingual skills adds to her ability to create labels in French and English as required by the CFIA, for the Canadian market. From French/Italian parents, Chris was born in Québec. She has been self-employed for many years and enjoys the challenges & drive that being a business owner brings.
