August 24th Newsletter – Spelt Peach Cake

Dear Spelties,
This weeks Spelt recipe – Spelt Peach Cake

At this time of year I love to can and set aside as much of the incredibly delicious BC fruit that I can find. So far, I have canned over 75 pounds of BC cherries, apricots, peaches from Organic farms around the province and I am going to can pears, plums and more peaches this coming week. I have also made jams with blueberries and raspberries and next is going to be a blackcurrant port jelly. This winter I will use my peaches to make this delightful cake but for now, I will make as many as I can with big beautiful fresh BC organic peaches.

Ingredients

Topping

1/4 cup unsalted butter
1/8 cup maple sugar
1/2 cup organic cane sugar
4 ripe organic peaches, peeled and cut into 8 wedges each – I used a hot water bath to peel the skin off the peaches.

Cake

2 1/4 cups White Spelt flour
3 teaspoons baking powder
1/2 cup unsalted butter
1 cup organic cane sugar
2 large eggs
2 teaspoons pure vanilla extract
1 cup of buttermilk (I used leftover liquid from making a soft goat cheese)

Method

For the topping, melt the butter and add the maple sugar and organic cane sugar. Take a greased 9 inch spring form cake pan and press mixture evenly on bottom of pan. Place peach slices on top of sugar mixture.

In mixing bowl, mix flour and baking powder together and set aside.

Beat butter and sugar together with electric mixer for 2 to 3 minutes, until mixture is light and fluffy. Add the eggs one at a time, beating well after each addition. Add vanilla and buttermilk and beat well until combined.

Gently stir in the dry ingredients until just incorporated and lumps are gone.

Pour batter evenly over peaches.

Place cake pan on a baking sheet and bake on the centre rack of preheated 350 degree oven for 55 minutes to an hour, or until cake tester comes out clean. Let cake cool for 10 minutes before turning out upside down onto a plate. Serve slightly warm.
