July 20th Newsletter – Spelt Fillo Quiches

This weeks Spelt recipe – Vancouver Folk Music Festival Spelt Fillo Quiches

As I was getting ready for another year at the Vancouver Folk Music Festival, I realized that the first one I attended was thirty years ago, and I have now been volunteering for 3 years. This has always been an amazing social and musical event and being able to volunteer now is such a delight for me. This year was a bit hectic for me in that I had a volunteer shift all day Friday and then it is the weekend of the folk fest, so I had to make something on Thursday that would get me through the weekend. I thought about what things I love to make and this is my recipe for the weekend. These are perfect to make a day or two ahead and keep in the fridge for whatever event or meal you want.


Makes 12

4 eggs
2 cups of milk (I used Avalon 2% organic)
1/4 teaspoon salt
1/8 teaspoon black pepper
3/4 cup of ham/smoked salmon/vegetables
1 cup grated cheese
1 tablespoon white Spelt flour

Beat eggs and mix together with milk, salt and pepper. Mix meat, vegetable and cheese together with flour. I made two different types for the Folk Festival, smoked salmon asparagus and Irish ham with gouda cheese.

Cut fillo dough into 4 inch squares, 2 or 3 sheets thick and gently place into muffin tin. Put dry ingredients (meat/veg/cheese mixture) evenly into 12 cups. Pour egg mixture evenly into 12 cups and bake at 350 degrees for 25 to 30 minutes or until knife inserted in center comes out clean. Remove from oven, let cool, refrigerate and take with you on a picnic or to the Vancouver Folk Music Festival in your cooler. These are a nice size for a snack or with Fries from Mad Jack’s at the folk festival (tell them the girl in the blue dress sent you, they will know who you mean).
