June 14th Newsletter – Spelt Pita Bread

Spelt Pita Bread


1 cup luke warm water
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon sugar
2 1/2 cups White Spelt Flour
2 teaspoons yeast

Place the ingredients in your mixer ( I use a kitchen aid mixer) in the order listed.

Using the dough hook, mix on lowest speed for 3 minutes.

Turn up to the next speed and continue mixing for another 5 minutes.

Take the dough hook out of the bowl scraping the dough off of it and let the dough rest for 30 minutes, covered.

Take dough out of mixing bowl and place on floured board, divide into 8 balls. Let rest for ten minutes. Meanwhile preheat the oven to 400 degrees.

Flatten each ball with your hand and then using a rolling pin, roll from the middle out. Roll each ball to between 1/4 and 1/8 of an inch thick.

Place on a baking sheet and let rest for 5 to 10 minutes. Then bake in the oven for 3 to 5 minutes until pockets puff up.
