June 21st Newsletter – Spelt Double Chocolate Chip Cookies

Dear Spelties,
This weeks Spelt recipe – Double Chocolate Chip Cookies

Ingredients

1 lb soft unsalted butter( not melted)
1 1/2 cup best brown sugar
1 cup organic cane sugar
2 teaspoons vanilla
2 large eggs

Dry:
6 cups white spelt flour
2 teaspoons baking soda
2 teaspoons salt
4 cups chocolate chips

Method

Cream butter and sugars in large mixing bowl,

Add vanilla and eggs and mix together with whisk until well blended

Add dry ingredients all together in a seperate bowl and add to creamed mixture.

Mix until smooth, use metal spoon, then use gloves.

Scoop onto tray using small scoop or spoon

Press down a bit

Bake at 325?for 10 minutes, then rotate and bake for 2 to 3 minutes.

I was at the Trout Lake Farmer’s Market a couple of weeks ago and saw this beautiful loaf of Spelt Bread and decided to try it. Very reminiscent of the Omega Protein bread that I use to make, it is a white Spelt bread with flax seeds in it. nice in texture. They will be a Trout Lake this weekend if you want to check it out.
