Spelt Orzo Salad with BBQ Prawns

Ingredients

1/2 Box of Spelt Orzo (1 1/4 cups dried pasta) available here: http://thespeltbakers.ca/products/baking-supplies/
1 jar of marinated artichokes 341 ml
227 grams of fresh cherry tomatoes
4 tablespoons pesto – I used homemade
Fresh Italian parsley chopped – 1 Tablespoon
1/4 cup olive oil
2 heaping tablespoons of pecorino romano cheese

16 prawns
1 tablespoon olive oil
1 tablespoon lemon juice
fresh cracked pepper and a pinch of sea salt

Bring water to a boil in a large pot. Add Spelt Orzo Pasta and cook as per instructions on box.
In a seperate bowl marinate prawns in olive oil, lemon juice with pepper and salt.

While Pasta is cooking, chop parsley, drain artichokes, cut cherry tomatoes in half.

When pasta is fully cooked, place pasta in a collander with holes small enough to not lose the cooked pasta. Cool down pasta with running cold water through the collander. Place cool pasta in large bowl, add artichokes, parsley, cherry tomatoes, pesto, fresh parsley, olive oil, and pecorino romano.

Place marinated prawns on skewers and cook on barbecue until prawns turn red. Serve on Orzo Salad.
